Anna's Kitchen - Chocolate Cup Cake Muffins

Chocolate ‘cup cake muffins'

(Should make 12)


Ingredients:


125g butter

80g coconut sugar

125g gluten-free self raising flour

2 medium eggs

3 tbsp unsweetened almond milk

Few drops vanilla extract

Approx 150g dark chocolate 70% cocoa solids or higher



Method:


Preheat the oven to Gas Mark 5 or 190 degrees centigrade. In a saucepan melt the butter and 100g of the chocolate.


Pour into a bowl and, once cool, add the rest of the ingredients and mix thoroughly.


Spoon into paper cases (best in a muffin or cup cake tin). It's okay to fill the cases to the top if you have enough mixture. Break up the remaining chocolate and push a piece very gently into the centre of each muffin.


Bake for 18-20 mins or until risen and feel springy to the touch (not wobbly!).
