Shrimp Soup

Ingredients

 

1 1/2 lbs raw shrimp or prawns, peeled & deveined

1/4 cup avocado oil

1/4 cup onion, diced

1 clove garlic, minced

1/4 cup roasted red pepper, diced

1/4 cup fresh coriander, chopped

1 can diced tomatoes  

1 cup coconut milk

1 Tsp hot chilli powder ( adjust to suit your taste)

2 Tbl fresh lime juice

salt and pepper to taste

 

Method

 

Heat the oil in a medium saucepan. Sauté onions for several minutes until soft, then add the garlic and peppers and cook for several minutes more. Add the tomatoes, shrimp and coriander to the pan and simmer gently until the shrimp turns opaque. Pour in the coconut milk and add the chilli powder, and cook just until heated through ? do not boil. Add lime juice and season with salt and pepper to taste. Serve hot, garnished with fresh coriander.
