Ingredients
625g fresh spinach (frozen also works but thraw and drain well)
4 tbs avocado oil
1 small onion thinly sliced
salt and pepper
6 eggs
4 garlic cloves finely chopped
Pinch cayenne pepper (optional...I like to replace this with a pinch of nutmeg!)
Method
Preheat oven to 180 degrees c. Coursely chop the spinach. Warm two tablespoons of oil in a large oven proof frying pan or dish. Add the onion and cook until tender. Add the spinach, season and cook for 2-3 mins. Transfer to a plate to drain.
In a bowl lightly beat the eggs with the garlic,cayenne pepper and salt and pepper.
Gently squeeze the liquid out of the spinach and stir the spinach into the egg mixture. Add the remaining oil to the pan then add then egg mixture on a medium heat and cook for a few minutes to set the egg round the edges. Transfer to the oven and cook for 7-9 mins until the egg is set. Leave to cool briefly before serving.
