Almond Flour Pancakes
Ingredients
- 1 1/2 Cups of fine ground blanched almond flour
- 1/2 teaspoon of baking soda (optional - if not using, separate the eggs and beat the egg whites)
- 1/4-1/2 teaspoon of salt
- 1/2 teaspoon of cinnamon
- 3 large eggs
- 4-5 tablespoons of full fat coconut milk
- Juice of half a lemon
- 1/4 cup of fruit (optional)
- Oil for frying
Method
- In a medium bowl, sift and/or mix together the almond flour, baking soda and cinnamon
- In a separate bowl, blend together the eggs, coconut milk and lemon juice
- Add the liquid ingredients to the dry and mix well
- Let the mixture rest for 5 minutes
- Pre heat your pan over a medium heat.
- Add some mixture to the pan - ideally the pancakes should be 3 inches round or they won't flip well.
- Fry the pancake until it starts to bubble and the edges just start to form, flip them over and continue to cook until the pancake firms up
