Almond Flour Pancakes

Ingredients

  • 1 1/2 Cups of fine ground blanched almond flour
  • 1/2 teaspoon of baking soda (optional - if not using, separate the eggs and beat the egg whites)
  • 1/4-1/2 teaspoon of salt
  • 1/2 teaspoon of cinnamon
  • 3 large eggs
  • 4-5 tablespoons of full fat coconut milk
  • Juice of half a lemon
  • 1/4 cup of fruit (optional)
  • Oil for frying 

Method

  • In a medium bowl, sift and/or mix together the almond flour, baking soda and cinnamon
  • In a separate bowl, blend together the eggs, coconut milk and lemon juice
  • Add the liquid ingredients to the dry and mix well
  • Let the mixture rest for 5 minutes
  • Pre heat your pan over a medium heat.
  • Add some mixture to the pan - ideally the pancakes should be 3 inches round or they won't flip well.
  • Fry the pancake until it starts to bubble and the edges just start to form, flip them over and continue to cook until the pancake firms up
