Scrambled Eggs with Tomatoes and Peppers:
1 tbsp avocado oil
1 onion, sliced
2 garlic cloves, crushed
1 red pepper, sliced
1 green pepper sliced
1 yellow pepper, sliced
2 tomatoes, chopped
1 sprig thyme
1 bay leaf
Salt and pepper
4 large eggs
Handful of chopped parsley for the garnish
Heat the oil in a large frying pan, add the onions and garlic and cook for 5 mins until soft. Add the peppers,tomatoes, thyme and bay leaf and continue to cook for approx 10 mins. Season to taste.
Meanwhile beat the eggs in a bowl and add when the vegetables are soft. Stir continuously for 1-2 mins or until the eggs are just cooked. Scatter with parsley and serve.
