Chilli and lime cashews
Ingredients:
6 tbsps lime juice
6 tbsps chili powder
4 tsps sea salt (Himalayan pink if you have a 4yr old princess to keep happy)
1/2-1 tsp cayenne pepper (1 tsp gives a nice chilli kick but spice it up with more if you like!)
6 cups raw cashew nuts
Preparation:
Position racks in the upper and lower thirds of oven; preheat to 250°F.
Whisk lime juice, chili powder, salt and cayenne in a large bowl. Add cashew nuts; toss to coat. Divide between 2 large rimmed baking sheets; spread in an even layer.
Bake, stirring every 15 minutes, until dry, about 45 minutes. Let cool completely. Store in an airtight container.
