Variety is a myth - Most people who do well with their nutrition have a collection of go-to meals that they repeat fairly often. Most people eat the same breakfast every day for years…then when they decide to improve their health they suddenly need 17 healthy breakfasts to rotate!
Batch Cooking - Cook meals that you can portion up and have left overs the following days and/or freeze them for convenience. Think about the dishes that work well for this: chilli, curry, large joints of meat can make many meals.
Stock Up on Frozen and Tinned Staples - It might not be gourmet but it removes the excuse of not having anything to eat. Frozen fish, frozen chicken, frozen vegetables can all be cooked straight from the freezer. Tinned fish, jars of olives and pickled veg don't perish. All you need is a protein source and some vegetables to make a nutritious meal…and maybe some chilli sauce!
