Carrot halwa recipe

 

INGREDIENTS

10 grated carrots

1 litre almond milk

2 tbsp ghee or butter

2 tbsp ground almonds

5 to 6 green cardamom pods

Handful of pomegranate seeds

 

INSTRUCTIONS

rinse, peel and grate the carrots.

in a deep thick bottomed pan combine almond milk, butter and grated carrots.

on a low to medium flame, bring the whole mixture to a boil and then simmer for 1 hour, stirring occasionally.

when the milk has 75% reduced, add the ground almonds and cardamon pods

stir well and continue to simmer

serve hot, warm or you can also serve it cold, sprinkle with a small handful of pomegranates
