Coconut and Lime Slice Recipe

Ingredients

300ml double cream
250ml coconut cream
zest and juice of 1 lime
Opptional stevia,sweeten to taste

Method


Line a 900g loaf time with enough cling film to allow you to wrap the sides over the top of the tin later on. Whisk the cream until it holds peaks. Whisk in the coconut cream, lime zest and juice and opptional stevia until it holds its shape again. Tip into tin and smooth the top, wrap the cling film back over and place in the freezer for at least 4 hrs, preferably overnight. To serve turn out and, remove cling film and use a hot knife to slice.
