Fish Soup

Ingredients


1 red onion

2 sticks celery

!/2 a small fennel bulb

2 cloves garlic

1 red chilli, deseeded

2 table spoons avocado oil

1 glass dry white wine

800g chopped tomatoes

1/2 butternut squash peeled and grated

500 ml fish stock

200g salmon fillet

300g halibut fillet

12 raw peeled prawns

1/2 lemon

1 large handful fresh parsley, chopped


Method

Finely chop the onion,fennel,garlic, celery and chilli. Heat the oil in a large pan , add the chopped veg and sweat on a gentle heat until soft. Add the wine, tomatoes and squash and bring to the boil. Cover and simmer for 30 mins. Season. Roughly chop the salmon and halibut and add to the pan. Add the prawns, cover and simmer for 10 mins until cooked. Season to taste. Serve with a squeeze of lemon juice and a sprinkle of chopped parsley.
