Ingredients:
2 x 100g bars of 90% dark chocolate
50g coconut oil
100g chopped almonds
150g chopped dates
2 tblsp cocoa nibs (optional)
2 tsp chia seeds (optional)
2 handfuls dried coconut flakes
Method:
Break the chocolate into pieces and place in a bowl over a pan of hot
water, add the coconut oil and stir until melted. Leave to cool.
Once cool, stir in the rest of the ingredients.
Pour the mixture into a lined square cake tin or small baking tray.
Chill for at least 2 hours. Slice and serve.
We tried this recipe with fresh chopped blueberries instead of
dates…..it worked wonderfully.
I make this with whatever happens to be in the cupboard/fridge so try
replacing ingredients with your favourite fruits, nuts and seeds to put your
own spin on it. I would have included a lovely picture of the cake.
Unfortunately Darren ate it all!
